U.S. Food and Drug Administration has weighed in on whether chocolate is good for the heart. The answer, it turns out, is a bit more complicated than a simple yes or no.
“Supportive but inconclusive scientific evidence suggests that consuming at least 200 mg of cocoa flavanols daily, such as provided by high flavanol cocoa powder, or high flavanol semisweet or high flavanol dark chocolate, may reduce the risk of cardiovascular disease,” the agency wrote on February 1, 2023.
Guess what is required to manufacture chocolate: cocoa beans, just like the ones listed below.
Cocoa, the primary ingredient of chocolate, is derived from the cacao beans. Theobroma cacao, a native plant of the Amazon, was domesticated more than 5,000 years ago and used by pre-Columbian cultures like the Olmecs, Mocayas, and Mayans.
Cacao beans and cocoa beans are used interchangeably by chocolatiers or chocolate masters and producers. Simply think of cocoa nibs, cocoa liquor, cocoa powder and cocoa butter as processed cacao.
The bakery industry is one of the largest users of cocoa products.
Numerous applications such as cakes, pastries, brownies, doughnuts, pies, cookies, wafers, biscuits, biscuit and wafer fillings, frozen bakery products, and bakery premixes make cocoa powder a versatile ingredient.

If you are a Maître Chocolatier or Chocolate Master, Roaster, Chef or owner of a Specialty Store, you may not need to import several metric tons of gourmet, certified organic or conventional cocoa beans per order.

White cacao beans from the Marañón Canyon in Peru have fewer bitter anthocyanins, produce a more mellow-tasting, less acidic chocolate. The chocolate is intense, with a floral aroma and a persistent mellow richness. Its lack of bitterness is remarkable.
These cacao beans are some of the rarest, growing at an altitude above 3,500 feet, not the common 2,000 feet, according to the Agricultural Research Service of the USDA. White cacao beans are the most prized varieties of cacao.
